As I headed out the door today to pick the kids up from school the temperature outside was screaming Summer while the allergies kept reminding me we’re still in Spring. I won’t let a little thing like seasons get in the way of getting a head start on the fun. I’m dreaming of the beach, vacations, time off from homework & annoying alarms reminding me we have to be somewhere at a specific time. I rushed home with the boys and made my favorite lemonade as we sat and sipped the cold drink by the pool talking about how our day had been.
Here’s my favorite recipe to Basil Lemonade I make all the time. Enjoy!
Ingredients:
1 cup of basil leaves *
2 cups of water *
2 cup of sugar *
9 strips of lemon zest *
2 or 3 large lemons
5-8 leaves of Basil
* To make syrup
Bring the first 4 ingredients to a boil in a medium saucepan, stirring until the sugar is dissolved. Optional: Use a strainer to discard the solids and leave only the liquid. I only discard the lemon zest but keep the basil. Let cool for about an hour.
To make lemonade:
Squeeze the large lemons. Next, using a wooden spoon crush together the 5 – 8 basil leaves, lemon juice and lemons. Add about 3/4 water and some of the syrup until you get a good tangy blend. Pour over ice. I like my lemonade with all the “stuff” inside. Yellow & green make me happy
Grown up version: Add a bit of vodka to your lemonade!
